Cocoa Nibs Kisses |

| |
1 cup butter
½ cup icing sugar
1 tsp Vanilla
2 ¼ cup flour
1 cup cocoa nibs
icing sugar for dusting |

- Cream butter, icing sugar and vanilla thoroughly
- Add flour, mix well
- Stir in Cocoa nibs
- Form 1" balls
- Place on ungreased cookie sheet
- Bake 8 – 12 min. at 200C/400F
- Dust with icing sugar after they have cooled completely

Cocoa Nibs Cookies |

1 cup butter
¾ cup sugar
¾ cup brown sugar
2 eggs
1 tsp Vanilla
2 ¼ cup flour
1 tsp baking soda
1 cup cocoa nibs
1-2 cup chocolate chips or chunks |

- Cream butter and sugars until light and fluffy
- Add eggs and vanilla, beat well
- Add remaining ingredients and mix thoroughly
- Drop with teaspoons onto lightly greased cookie sheet
- Bake for 10-12 minutes at 180C/350F

*Variation – add 1.4 cup chopped maraschino cherries |

Sugar Coated Cocoa Nibs |
| |

3.5 oz (100g) cocoa nibs
¼ cup sugar
½ tsp. butter or margarine
½ tsp. Vanilla or Maple Extract |
| |
- Combine cocoa nibs and sugar in a saucepan
- Stir constantly over medium heat until sugar dissolves. Mixture will smoke a little
- Remove from heat, stir in butter and extract
- Pour onto a baking sheet that has been lined with parchment paper
- Let cool and break apart. Store in an airtight container
