Cocoa Nibs Kisses

   
  1 cup butter
½ cup icing sugar
1 tsp Vanilla
2 ¼ cup flour
1 cup cocoa nibs
icing sugar for dusting
 

 

  1. Cream butter, icing sugar and vanilla thoroughly
  2. Add flour, mix well
  3. Stir in Cocoa nibs
  4. Form 1" balls
  5. Place on ungreased cookie sheet
  6. Bake 8 – 12 min. at 200C/400F
  7. Dust with icing sugar after they have cooled completely
 
 
  Cocoa Nibs Cookies
 
 

1 cup butter
¾ cup sugar
¾ cup brown sugar
2 eggs
1 tsp Vanilla
2 ¼ cup flour
1 tsp baking soda
1 cup cocoa nibs
1-2 cup chocolate chips or chunks

 
  1. Cream butter and sugars until light and fluffy
  2. Add eggs and vanilla, beat well
  3. Add remaining ingredients and mix thoroughly
  4. Drop with teaspoons onto lightly greased cookie sheet
  5. Bake for 10-12 minutes at 180C/350F
 
  *Variation – add 1.4 cup chopped maraschino cherries
 
 
  Sugar Coated Cocoa Nibs
 
 

3.5 oz (100g) cocoa nibs
¼ cup sugar
½ tsp. butter or margarine
½ tsp. Vanilla or Maple Extract

 
  1. Combine cocoa nibs and sugar in a saucepan
  2. Stir constantly over medium heat until sugar dissolves. Mixture will smoke a little
  3. Remove from heat, stir in butter and extract
  4. Pour onto a baking sheet that has been lined with parchment paper
  5. Let cool and break apart. Store in an airtight container
 
   
  Other Cocoa Nib Tips
 
  • Use as sprinkles on ice cream
  • Add “crunch” to your cheese cake crust
  • Add to your home made muesli mix
